The 2012 Cake Recipe

Banana and Cherry Loaf


  • 90g soft margarine, plus extra for greasing
  • 2 large bananas mashed
  • 125g quartered cherries
  • 150ml boiling water
  • 90g caster sugar
  • 1 egg
  • 250g self-raising flour
  • 1tsp baking powder
  • 1kg loaf tin


  1. Lightly grease the loaf tin with margarine and line with greaseproof paper.
  2. Combine the margarine, sugar, egg, flour and baking powder in a large bowl and beat until blended.  Add the banana, cherries and hot water.
  3. Spoon into the prepared loaf tin and bake in a preheated oven at 180*C (350*F, Gas 4) for one and a quarter hours to one and and half hours until well risen and firm to the touch.
  4. Leave to cool in the tin for a few minutes then turn out on to a wire rack.
